The history of biscotti can be traced back to ancient Rome. It was a staple food for the Roman army, as it was durable and easy to store. Biscotti was also popular among sailors, as it would last for long voyages without going bad. Over time, biscotti became more refined and was enjoyed by the nobility and upper classes in Italy.
In the 14th century, biscotti became popular in the city of Prato in Tuscany, where it is still made today. The city became known for its biscotti, which were made with almonds and anise flavoring. The recipe was passed down from generation to generation, and today, Prato is still known for its delicious biscotti.
Traditional biscotti recipes include eggs, butter, and sugar. However, as more people are turning to plant-based diets, there are now vegan-friendly versions of this classic cookie.

The key ingredient in traditional biscotti is almonds, which provide a nutty flavor and crunch. To make vegan biscotti, almonds can still be used, but other nuts such as cashews, pecans, or walnuts can also be used.
Making biscotti involves twice-baking the cookie. The first bake creates a firm, dry cookie that can be sliced into logs. The logs are then baked again to create a crispy, crunchy cookie that can be enjoyed on its own or dipped in coffee or wine.
Biscotti is a versatile cookie that can be made with a variety of flavors. Some popular variations include chocolate chip, cranberry, orange, and pistachio. To make vegan versions of these flavors, vegan chocolate chips and dried fruit can be used, and citrus zest can be used instead of dairy products.
Biscotti has gained popularity outside of Italy and can now be found in bakeries and cafes around the world. It is often enjoyed as a mid-morning or mid-afternoon snack and pairs well with coffee or tea.
In addition to being delicious, biscotti also has health benefits. Almonds are a great source of protein, healthy fats, and fiber, and they are also packed with vitamins and minerals. By using natural sweeteners and plant-based ingredients, vegan biscotti can be a healthier option than traditional biscotti recipes.
