Vegan Pina Colada Cake
Equipment
- 1 oven
Ingredients
Cake
- 2.5 cups all purpose flour
- 1 cup desiccated coconut
- 3/4 cup sugar
- 1.5 tsp baking powder
- 2 cups Pineapple Juice
- 1/2 cup coconut milk
- 1/2 cup cooking oil
- 1 tsp vanilla essence
syrup
- 1/2 cup pineapple juice
- 4 tbsp sugar
- 4 tbsp water
Instructions
Cake
- start by pouring the juice and other liquids into a big mixing bowl
- add in all the dry in and with a sieve add in the flour and whisk
- Add in the coconut and whisk again to ensure no lumps are there.
- once all the cake ingredients are mixed together, grease the baking tin well from all sides.
- Preheat oven on 170C or 340F
- Pour in the cake mixture into the baking tin and place in middle shelf of oven for 45 minutes
Syrup
- add all the ingredients to a sauce pan and stir until thick
Finishing touches
- Once the cake is out the oven, poke it with a toothpick or fork, if it comes out dry then the cake is ready for the syrup
- Pour on syrup and decorate all over with coconut.
