Vegan Alicha Dinich (root vegetable stew)

- 1 pot
Ingredients
- 3 medium onions roughly chopped
- 3 medium carrots 1/2 cm slices
- 1 handful garlic cloves sliced
- 1/2 long green chili pepper thin sliced
- 2 medium sweet potatoes cubed
- 500 grams regular potatoes cubed
- 1 Pinch salt
- 3 tablespoons Alicha spice mix
Alicha Spice mix
- 1 part Caraway seeds (ground)
- 1 part Garlic Powder
- 1 part Ginger powder
- 1 part Fenugreek powder
- 1 part Turmeric powder
Instructions
- Slice the onions, garlic and pepper and sautee in a dash of cooking oil in the pot on a low-medium flame
- meanwhile chop the root vegetables into equal sizes
- when the garlic and onions have softened, add in the root veg and fill pot with water until it almost reaches the top layer of veg
- cover until veg are semi soft
- add in the salt and alicha powder mix
- stir and cover until cooked to a soft texture
- serve
