Artichokes have been a staple of Mediterranean cuisine for centuries, and the artichoke is believed to have originated in North Africa. The ancient Greeks and Romans prized the artichoke for its medicinal properties and used it in cooking for over 2,000 years. Artichokes were introduced to Israel in the 15th century, and since then, they have become a staple ingredient in Israeli cuisine.
Peas are another ingredient that has a long history in Mediterranean cuisine. Peas were cultivated in the Mediterranean region as early as 5,000 BC and were a common ingredient in Roman cuisine. Peas were introduced to Israel in the 19th century, and since then, they have become a popular ingredient in Israeli cuisine.
Israeli artichokes and peas is a dish that is typically served as a main course and is often accompanied by a variety of side dishes. The dish is made by sautéing onions and garlic in olive oil until they are soft and translucent. The artichokes and peas are then added to the pan, along with a mixture of herbs and spices, and cooked until the vegetables are tender and the flavors have melded together and topped with some vegan chicken stock.
The combination of artichokes and peas in this dish is a perfect example of the Mediterranean diet. The Mediterranean diet is known for its focus on fresh vegetables, legumes, and healthy fats, and this dish incorporates all of these components. The artichokes are a rich source of antioxidants, vitamins, and minerals, while the peas are an excellent source of protein and fiber.

The stock I always use for ‘Chicken’ is made by Osem, it’s by far THE best you will find, make sure you have the one that says ‘Vegetarian’ on it (it’s Vegan). The flavour of this is by far the most superior.
Israeli artichokes and peas is a versatile dish that can be customized to suit a variety of tastes and dietary preferences. For a vegan version of the dish, the onions and garlic can be sautéed in olive oil or vegetable broth, and the dish can be seasoned with a variety of herbs and spices, such as oregano, thyme, and paprika. The dish can also be made gluten-free by using gluten-free breadcrumbs or omitting them altogether.
In Israel, artichokes and peas are often associated with Jewish holidays, such as Passover and Rosh Hashanah, and are a common dish served during family gatherings and celebrations. The dish is also a popular street food in Israel, with vendors serving up hot plates of artichokes and peas to hungry customers.
The preparation of Israeli artichokes and peas can be a bit time-consuming, but the end result is worth the effort. The artichokes must be trimmed and cleaned before they are added to the pan, and the peas must be shelled and washed so I recommend using frozen artichoke hearts. However, once the vegetables are prepared, the dish comes together quickly and easily.
In conclusion, Israeli artichokes and peas is a delicious and nutritious dish that has a rich history in Mediterranean cuisine. The dish is versatile and can be customized to suit a variety of tastes and dietary preferences, including vegan and vegetarian diets. The combination of artichokes and peas creates a hearty and satisfying dish that is perfect for any occasion.
