Ingredients
  

  • 4 artichoke hearts per portion
  • 1 cup peas per portion
  • 1 medium onion (finely chopped)
  • 2 tbsp vegan chicken stock powder / bouillon
  • 3 cloves garlic thin sliced
  • Water - enough to cover the top
  • 2 tbsp cooking oil
  • 1 squeeze lemon
  • salt to taste

Instructions
 

  • in a pot with some oil, start by frying the onions and garlic
  • after a few minutes, add in the stock powder / bouillon
  • add a dash of water to enable all the flavours to stew together, creating a sauce before adding in the rest.
  • add in the arichokes so the cups are facing upwards
  • add water to reach the top layer of artichoke and place a lid on the pot with a low flame
  • after 30 minutes the artichokes should be al dente
  • at this stage squeeze in some lemon juice
  • add in the peas
  • after 15 minutes the peas will have wilted, this is now ready to serve.
