Vegan Eggplant Mayo (baba ghanoush)
Ingredients
- 2 medium eggplants (sliced down the middle, lengthways)
- 5 cloves garlic (thin sliced)
- 5 tbs vegan mayonaise
- 1/2 tsp smoked paprika
- salt - to taste
Instructions
- slice the eggplants / aubergine down the middle and on each half, run the knife through to make stripes that are deep just enough not to pierce the other side
- insert the garlic into the eggplant spaces
- sprinkle on some salt and smoked paprika, rub some olive oil on top
- cover with aluminium foil and bake on 180*C / 355*F for 45 minutes
- once cool, scrape out the eggplant contents and blend / mash with vegan mayonaise.
- serve as a side dish, it goes great as a dip with pita bread.
