How to make Vegan Eggplant Mayo (baba ghanoush)

Ingredients
  

  • 2 medium eggplants (sliced down the middle, lengthways)
  • 5 cloves garlic (thin sliced)
  • 5 tbs vegan mayonaise
  • 1/2 tsp smoked paprika
  • salt - to taste

Instructions
 

  • slice the eggplants / aubergine down the middle and on each half, run the knife through to make stripes that are deep just enough not to pierce the other side
  • insert the garlic into the eggplant spaces
  • sprinkle on some salt and smoked paprika, rub some olive oil on top
  • cover with aluminium foil and bake on 180*C / 355*F for 45 minutes
  • once cool, scrape out the eggplant contents and blend / mash with vegan mayonaise.
  • serve as a side dish, it goes great as a dip with pita bread.
