Ingredients
  

  • 1 bag frozen artichoke
  • 1 pack vegan mincemeat
  • 1 handful parsley finely chopped
  • 2 medium onions finely chopped
  • 1 cup flour
  • 3 medium tomatoes finely chopped
  • 1 tbsp tomato puree
  • 1 tbsp garlic puree (2 crushed garlic cloves)
  • 1/2 tsp cumin
  • 1/2 tsp hot paprika
  • 1/2 tsp regular / sweet paprika

Instructions
 

Vegan mincemeat

  • fry the onions, garlic, half the amount of the spices and garlic paste
  • add in the vegan mince and parsley and fry until cooked and set it aside

Artichoke Sauce

  • In a separate pan, fry onions and add in other half of spices alongside the tomatoes and some more parsley. cook until soft

Filling the artichoke

  • Take the artichoke hearts and fill them with the vegan mincemeat
  • Coat the artichoke in flour as shown
  • the end result should look like this
  • lightly fry the artichokes until they are crispy on the outside
  • lay the artichokes in a baking tray and pour on the sauce
  • cover with aluminum foil and bake for 45 minutes on 180*C / 355*F
