Gnocchi in beetroot cream
Equipment
- 1 blender optional
Ingredients
- 1 packet vegan gnocchi
- 2 smal beetroots very finely chopped
- 250 mil vegan cream
- 1/4 medium onion very finely chopped
- 2 cloves Garlic very finely chopped
- 1 tbsp brown sugar
- 1 tbsp vinegar
Instructions
- Finely chop the beetroot (mince it) as well as the onions and garlic
- start by lightly frying the onions and garlic in olive oil
- add the sugar and vinegar and continue to stir for a few minutes
- once well combined, add in the beetroot
- add in the cream and stir
- boil the gnocchi until it floats to the top
- at this stage you can either blend the beetroot cream or leave it as it is with the small bites of beetroot which I prefer but it's up to you.
- Add the gnocchi to the sauce, stir and serve.
