- 1 packet vegan gnocchi
- 2 smal beetroots very finely chopped
- 250 mil vegan cream
- 1/4 medium onion very finely chopped
- 2 cloves Garlic very finely chopped
- 1 tbsp brown sugar
- 1 tbsp vinegar
Finely chop the beetroot (mince it) as well as the onions and garlic
start by lightly frying the onions and garlic in olive oil
add the sugar and vinegar and continue to stir for a few minutes
once well combined, add in the beetroot
add in the cream and stir
boil the gnocchi until it floats to the top
at this stage you can either blend the beetroot cream or leave it as it is with the small bites of beetroot which I prefer but it's up to you.
Add the gnocchi to the sauce, stir and serve.
