Vegan Pistachio Ice Cream / Gelato
Equipment
- 1 blender
Ingredients
- 100 g pistachios
- 3 small ripe avocados
- 70 g agave syrup / maple
- 60 g plant based milk
- 1 tbsp lemon juice
- 2 tbsp ground nut/coconut/pistachio oil
Instructions
- lay out the pistachios on a tray and roast for 15 minutes, this will release the oils inside but also assist in peeling the dry skin 150*C / 300*F
- once slightly chilled, rub the pistachios in your hands to peel off the excess skin
- add all the contents to a blender
- Blend until you have a cream
- transfer to a freezable tub and put in freezer for 4 hours
- remove from freezer after 4 hours and blend again. repeat this process 3 times and it will be ready to serve.
