Vegan Jamaican ginger cake

Equipment

  • 1 12" straight Baking tin

Ingredients
  

  • 200 Grams Plain white flour put through a sieve
  • 250 Grams Golden Syrup / Black Treacle ot 50/50 of both
  • 100 Grams Dark brown sugar
  • 120 Grams Vegan Butter
  • 2 TBS Finely chopped ginger Fresh or candied
  • 2 TBS Ginger Powder
  • 1/2 Cup Plant based Milk
  • 2 Flax Eggs (2 tablespoons milled flax seed and 5 tablespoons hot water)
  • 1 TSP Baking Soda

Instructions
 

  • Preheat oven to 180ºC / 355ºF
  • Grind up 2 tablespoons of flax seeds and add 5 tablespoons to hot water
  • Allow the flax mix to sit for 10 minutes until it goes gloopy this will become a 'flax egg'
  • Grease the inner walls of the baking tray
  • Chop the fresh ginger as small as you can get it.
  • Add the butter, sugar, golden syrup and ginger to a pot on a low flame
  • while that's melting, get a separate mixing bowl and put the flour through a sieve
  • add baking soda to the flour and mix well.
  • once the butter, sugar and ginger mix has become a syrup have all melted together...
  • add them to the flour mix and stirr.
  • Once all together, add in the flax egg and plant based milk
  • now that you have it all mixed together, pour into the baking tray and place in oven for 45 minutes
  • Poke the final cake in the middle with a toothpick or knife, if it comes out dry it's ready
  • allow to cool down to room temp and serve!
