Preheat oven to 180ºC / 355ºF
Grind up 2 tablespoons of flax seeds and add 5 tablespoons to hot water
Allow the flax mix to sit for 10 minutes until it goes gloopy this will become a 'flax egg'
Grease the inner walls of the baking tray
Chop the fresh ginger as small as you can get it.
Add the butter, sugar, golden syrup and ginger to a pot on a low flame
while that's melting, get a separate mixing bowl and put the flour through a sieve
add baking soda to the flour and mix well.
once the butter, sugar and ginger mix has become a syrup have all melted together...
add them to the flour mix and stirr.
Once all together, add in the flax egg and plant based milk
now that you have it all mixed together, pour into the baking tray and place in oven for 45 minutes
Poke the final cake in the middle with a toothpick or knife, if it comes out dry it's ready
allow to cool down to room temp and serve!
