Vegan Mango Dal
A beautiful South Indian version of the classic lentil stew called Dal. This is probably the best you will ever have!

- 2 cups split pigeon peas
- 4 cups water
- 1/2 large unripe mango
- 1 teaspoon mustard seeds
- 1 tablespoon cumin
- 4 curry leaves
- 2-4 medium heat dry chillies
- 3 birds eye green chillies
- 1 teaspoon chopped ginger
- 1/4 teaspoon hing / asafoetifa (available at all Indian grocery shops)
- 2 tablespoons cooking oil
- salt to taste
Start by peeling the green mango and cutting into cubes
rinse the split peas until the water comes out clear
boil the split peas until they are semi soft
in a separate non stick pan, add a tablespoon of cooking oil and lightly fry the spices and ginger until all the flavours have released
Add in the mango
stir until mango has softened and add in the cooked lentils
add salt to taste and serve with rice! (we drizzled on some chili oil and added chopped coriander/cilantro to make it pretty!)
