- 2 plantains (extra ripe)
- 2 cups plain flour
- 1 cup water
- 1/2 cup sugar
- 1 tsp yeast
- 1 tsp curry powder
- 1 tsp mixed herbs
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp stock powder
in a mixing bowl, add the flour , herbs/spices and sugar
mix all the dry ingredients together to ensure they're all incorporated
mash the plantain so you have a puree and add it into the mix and stir it well along with the water
cover and set aside for one hour
prepare a pan filled with oil for deep frying
place a golf ball sized amount in your hand
Make a loose fist so it squeezes out the side and straight into the oil
fry until they float and are golden brown all over
