Vegan Ricotta bites

  • 1 food processor

Ingredients
  

  • 1 box firm tofu
  • 3 tbsp tahini
  • 2 tbsp mustard
  • 1/2 tsp cumin
  • 1/2 tsp garlic powder
  • 1 cup panko breadcumbs
  • 1 tsp salt
  • 3/4 cup cornstarch
  • 1/4 cup water
  • 1 handful spinach optional

Instructions
 

  • prepare all your ingredients as seen below
  • Start by adding all the ingredients except the water, cornstarch and breadcrumbs to the processor
  • blend until you have a creamy paste
  • in a bowl add the cornstarch and water and stir until there are no lumps
  • grab a golf ball sized portion of the tofu and roll in hand, dip in the cornstarch water and panko
  • once all the tofu balls are covered, it should look like this
  • Fry until crispy and golden on both sides
  • Add to salads, pita bread and enjoy!
